RECONEIXEMENT DE GLÚCIDS REDUCTORS I
DE MIDÓ EN ALIMENTS.
L’objectiu d’aquesta
pràctica és detectar glúcids reductors o midó en alguns aliments. Cada grup
d’alumnes analitzarà un aliment, i es compararà el resultat amb els glúcids
que han donat reacció a la prova de Fehling (la glucosa) i de Lugol (el midó) respectivament (la
glucosa i el midó).

Material: 18 tubs d’assaig, solució de glucosa al 5%,solució de midó al 5%, aliments:
raïm, fetge, pa, mongetes, patata, embotit, coca-cola, llet, pa de motlle, morter
i mà del morter, embut, pinces, trípode, reixeta amb amiant, focus de calor,
retolador per a vidre, 2 pipetes, balança i espàtula.
Productes químics: aigua destil·lada, reactiu de Fehling A i B,
Lugol (solució de iode).
Desenvolupament de la pràctica:
1.
Triturar amb
un morter un trosset de l’aliment sòlid amb una mica d’aigua i després abocar
una mica en dos tubs d’assaig i amb l’ajut d’un embut si cal.
2.
Posa també en
dos tubs d’assaig els aliments líquids.
3.
A continuació
posa en un dels tubs 10 gotes de Fehling A i 10 gotes de Fehling B i posa’l a
escalfar fins a que bulli. En l’altra tub de la mateixa mostra posa 10 gotes de
lugol.
4.
Observa i
anota els resultats en una graella. Interpreta els resultats.

Testing for Sugars and Starch
Carbohydrates are
the body's most important and readily available source of energy.
The two major forms
of carbohydrates are:
· simple sugars (simple carbohydrates), such as fructose, glucose, and
lactose, found in nutritious whole fruits.
· starches (complex
carbohydrates), found in foods such as starchy vegetables, grains, rice, and
breads and cereals.
Carbohydrates are a
main fuel source for some cells, especially those in the brain, nervous system,
and red blood cells. Muscles also rely on a dependable supply of carbohydrate
to fuel intense physical activity. Yielding on average 4 kcal per gram,
carbohydrates are a readily available fuel for all cells, both in the form of
blood glucose and that stored in the liver and muscles as glycogen. The
glycogen stored in the liver can be used to maintain blood glucose availability
in times when the diet does not supply enough carbohydrate. Regular intake of
carbohydrate is important, because liver glycogen stores are depleted in about
18 hours if no carbohydrate is consumed. After that point, the body is forced
to produce carbohydrate, much of which comes from breakdown of proteins in the
body. This eventually leads to health problems.
Part 1:
Purpose: To investigate the presence of
simple sugars in various food products.
Materials:
Hot plate, 500 mL beaker, Glucose solution with
Fehling A + B and heat, Starch solution with Fehling A + B + heat, 6 test
tubes, distilled water, 6 food products (bread, brown sugar, white sugar, mold bread, integral bread, fruits or
vegetables), and Fehling A & Fehling B Solution
Method
1. Turn an electric
plate on high and place a 500 mL beaker half full of water, to make a hot
water bath.
2. Place foods in
separate test tubes.
‐ if the food is líquid
(coca-cola, milk...) pour enough to just cover the bottom of the test tubes.
‐ If the food is
solid (e.g., Grapes, liver, bread, beans, potatoes, cold meats, bread mold, white
sugar, brown sugar), crush a small amount and add enough water to cover the
bottom of the tube.
3. Add 5 drops of Fehling
A and Fehling B solution to each test tube.
4. Place the test
tubes in the hot water bath and note your observation.
Observations:
Complete the chart below using the food your
group has compiled. The Fehling A anf Fehling B Solution
provides a test for the presence of simple
sugars. If sugar is present, the Fehling's Solution will
turn color (shades of yellow, orange, brown).

Part 2:
Purpose: To investigate the
presence of starch in various food products.
Materials: Glucose solution with
Iodine solution, Starch solution with iodine solutions, 6 test tubes, distilled
water, 6 food products (bread, brown sugar, white sugar, mold bread, integral
bread, fruits or vegetables), and Fehling A & Fehling B Solution.
Method :
1. Place a sample
of each food into the test tube. Test similar amounts of each food.
2. Place a few
drops of iodine solution on each food.
3. Make
observations immediately.
4. Wait a few more
minutes and note any other changes.
Observations
Complete the chart
below using the food your group has compiled. When drops of iodine solution are
applied to a food containing starch, the solution will turn dark blue, purple,
or blackish.

RECONOCIMIENTO DE GLÚCIDOS REDUCTORES Y DE ALMIDÓN EN ALIMENTOS.
El objetivo de esta práctica es detectar glúcidos reductores o almidón en algunos alimentos. Cada grupo de alumnos analizará un alimento, y se comparará el resultado con los dos glúcidos que han dado reacción a la prueba de Fehling y de Lugol respectivamente (la glucosa y el almidón).
Material: tubos de ensayo, solución de glucosa al 5%, solución de almidón al 5%, alimentos: uva, hígado, pan, judías, patata, embutido, coca-cola, leche, pan de molde, mortero y mano del mortero, embudo, pinzas, trípode, rejilla con amianto, focos de calor, rotulador para vidrio, 2 pipetas, balanza y espátula.
Productos químicos: agua destilada, reactivo de Fehling A y B, Lugol.
Desarrollo de la práctica:
1. Triturar con un mortero un trocito del alimento sólido con un poco de agua y luego verter un poco en dos tubos de ensayo y con la ayuda de un embudo si es necesario.
2. Pone también en dos tubos de ensayo los alimentos líquidos.
3. A continuación pone en cada uno de los tubos 10 gotas de Fehling A y 10 gotas de Fehling B y ponerlo a calentar hasta que hierva.
4. En el otro tubo de la misma muestra pone 10 gotas de lugol.
5. Observa y anota los resultados en una tabla. Interpreta los resultados.
